Cookie cake

Soft, chewy cookies, small on a tray or two big ones in cake tins.

Cook 10–15 min · 190 °C fan

You'll need

  • 4 oz butter
  • 2½ oz caster sugar
  • 2½ oz soft brown sugar
  • 5 oz plain flour
  • 1 egg
  • ½ tsp bicarbonate of soda
  • ½ tsp vanilla essence
  • 1 pinch salt
  • 6 oz chocolate, chopped

Equipment

  • greased baking trays or 2 greased cake tins
  • cooling rack

Method

  1. Preheat the oven to 190 °C (fan). Grease the baking trays, or two cake tins for big cookies.
  2. Cream the butter and sugars together.
  3. Add the egg, vanilla and a spoonful of the flour.
  4. Beat until smooth.
  5. Add the rest of the flour, the salt and the bicarb, and mix.
  6. Stir in the chocolate.
  7. Spoon small cookies onto the trays, or divide the dough between the two tins.
  8. Bake for 10–12 minutes for small cookies, or 15 minutes for large ones.
  9. Cool on a rack. Leave large cookies in their tins until cool, then cut into segments.
