Lemon and Lime Soda Syrup
Our homemade 7UP, a zesty lemon and lime syrup to top up with water.
You'll need
- 1 cup water
- 1 cup sugar
- lemon zest, from 1 lemon
- lime zest, from 1 lime
- lemon juice, from 2 lemons
- lime juice, from 1 lime
- 1 pinch citric acid
Equipment
- saucepan
- sieve
Method
- Dissolve the sugar in the water and simmer with the zest. Don’t let it boil.
- Cover and steep for 20 minutes.
- Strain.
- Add the juice and stir.
- Add the citric acid and stir.
- Leave to cool.
To serve
Use 2–3 tbsp of syrup per cup of water. Chilled sparkling water is the most authentic (a home soda siphon works well), but still is fine too.
