Pan Haggerty

Layered potatoes, onion, carrot and bacon, simmered then grilled with cheddar.

Cook 35 min

You'll need

  • 1 tbsp vegetable oil
  • 250 g bacon
  • 6 potatoes, medium, peeled and sliced into thin rounds
  • 2 onions, peeled and sliced
  • 5 carrots, peeled and sliced
  • 500 ml chicken stock
  • 150 g cheddar cheese, grated
  • black pepper, to taste

Equipment

  • large ovenproof lidded pan
  • grill

Method

  1. Heat the oil in a large ovenproof pan (we use the light blue Le Creuset). Fry the bacon until it starts to crisp and brown. Remove it and set aside, leaving the fat and juices in the pan.
  2. Lay potatoes over the bottom of the pan, then a layer of onion, a layer of carrot and a layer of bacon. Grind pepper over.
  3. Repeat the layers, finishing with pepper. Taste before adding salt, as the bacon makes it salty already.
  4. Pour over the stock and cover with a lid or foil. Simmer for about 20 minutes, until the vegetables are tender.
  5. Preheat the grill. When everything is cooked, sprinkle the cheese on top.
  6. Grill until the cheese is bubbling and golden.
