Velveting Chicken

A bicarb soak that keeps chicken tender and soft.

Makes 250 g (chicken) · Soak 20–30 min

You'll need

  • 250 g chicken
  • 2–2½ tsp bicarbonate of soda

Equipment

  • colander

Method

  1. Slice the chicken, or cut it into bite-sized pieces.
  2. Place the chicken in a bowl and sprinkle with the bicarb.
  3. Toss with your fingers to coat as evenly as possible.
  4. Refrigerate: 20 minutes for slices, 30 for bite-sized pieces.
  5. Rinse well in a colander to remove the bicarb.
  6. Shake off, then pat away the excess. It doesn’t need to be completely dry.
  7. Use within 24 hours, as normal.

Notes

Rule of thumb: 9–12 tsp (3–4 tbsp) of bicarb per 1.2 kg of chicken. That’s about 2–2½ tsp for 250 g, or 4½–6 tsp for 600 g.

Keeps

Use within 24 hours.
